dc.description.abstract Response surface methodology was used to determine optimum conditions for extraction of protein from fish waste using enzymatic method. The enzymatic method involved protease enzyme which are alcalase and protamex. Both methods investigated independent variables o C), time (60-240 such as pH (7-11), temperature (40-60 minutes) and ratio of enzyme to sample (0.5-5). Selected response (dependent variable) which evaluates the extraction process for both methods were degree of hydrolysis (%) and protein concentration (mg/mL). From the results, extraction using enzymatic method-enzyme alcalase showed the highest yield of protein extracted (58.37%) and highest protein concentration (7.72 mg/ml) compared to enzymatic method-enzyme protamex. en_US
